GOAT PILAU

INGREDIENTS

  • 5 lbs lean goat with just a little bone
  • 4 cups of pishori rice
  • 1 heated cup of red or white onion
  • Half cup of diced ginger (small cubes)
  • 8 cloves of garlic, diced
  • 1/3 cup of canola oil
  • 1tsp of salt
  • 5 tbsp Pilau Masala

PROCEDURE

  1. Cut the goat into smaller cubes
  2. Clean the meat well
  3. Put the cleaned meat and salt into a pot
  4. Heat the pot until the water boils for a few minutes
  5. Take the pot out of the stove top
  6. Take out the meat then sieve the broth into a clean jug
  7. Add the oil, onion and ginger into a clean pot and fry over medium heat till they begin to brown a little
  8. Add the boiled goat meat and cover for about 5 minutes
  9. Add pilau masala then cover for 5 minutes
  10. Add the garlic and cover for 5 minutes
  11. Ensure that you keep stirring with all the additions
  12. Add the clean rice and stir as you crap the sticky ones out
  13. Add 7 and a half cups of the goat broth mixture and stir well
  14. Cover and ensure the heat is at medium
  15. When the rice is almost ready, with a little broth left, transfer the pilau into a clean tray
  16. Heat your oven to 350℉, 20 minutes
  17. Transfer the pilau into the oven to dry up well
  18. Once the 20 minutes oven time is complete, let the pilau sit in the hot oven until it dries well
  19. Take the pilau out and comb through it
  20. Serve when hot with a salad plate or your preferred choice of vegetables
